Cellar Temperature

Cellar temperatures range between 48°F and 59°F during barrel aging. The cellar is not heated and the temperature drops during the winter. These cooler winter temperatures aid in the normal precipitation of titrates and allow higher oxygen saturation during the first winter. In the cellar humidity is maintained at 85% by an injection fogging system. The cave humidity are naturally high. These high humidity levels reduce evaporation losses. They also skew the evaporation losses towards the loss of alcohol and away from the loss of water.
