Cooling begins early with the shade in the late afternoon and the cool breezes from the coast.

Coolest day temperatures are usually reached in the evenings.

Temperatures warm at night as the cold air settles into the valley floor.

All of the above influences the wines that are made and gives the appellation a distinct quality. Its red wines have deep color, a lot of soft tannins, lower acidity, higher pH, and fat, rich flavors in the finish.
